Apple Crumble

Serves 4 Prep Time <20 minutes Cook Time 30 minutes


This is a super tasty Apple Crumble recipe, you can alternate the fruit and change the sugar type to make it super low carb. Serve with custard, cream or icecream.



Ingredients


Crumble


  • 1/4 Cup of Coconut flakes (lightly toasted)

  • 1/4 Cup of Slivered almonds (lightly toasted)

  • 1/4 Cup of Quinoa flakes (lightly toasted)

  • 50g Almond

  • 25g Walnuts

  • 50 Coconut oil (Melted)

  • 1 Tbs Coconut sugar

  • 1 Tbs Desiccated coconut

  • 1/2 Tsp Nutmeg

  • 1/2 Tsp Cinnamon

  • 1/2 Tsp Vanilla extract

  • Pinch of salt


Apple Filling


  • 5 Apples Peeled (cored and chopped into chunks)

  • 1 Tbs Tapioca starch

  • 1 Tbs Coconut sugar

  • 1/2 Tsp Cinnamon

  • 1/2 Tsp Nutmeg

  • 1/4 Tsp Cardimon

  • 1/4 Cup of Sultanas

  • 1 Tsp of Vanilla extract

Conventional Method


  1. Preheat oven to 180 degrees Celcius (Fan-forced).

  2. Lightly toast the coconut flakes, slivered almonds and quinoa flakes in a dry pan. May be best to do in batches to avoid burning. Don't brown too much as they will brown in the oven as well.

  3. In a food processor blitz the almonds until flour is made, then add walnuts and blitz until it resembles crumbs.

  4. Add the toasted ingredients and blitz to break up to a size you like.

  5. Add created flour and remaining dry ingredients to a bowl and stir to combine.

  6. Stir through the melted coconut so that it evenly coats the crumble. Leave to the side until ready to assemble.

  7. Peel, core and chop up your apple into chunks. Depending on your preference you can either cook the apple from raw or steam it. If steaming, steam for around 7 minutes.

  8. Put apples cooked or raw in your baking dish and mix through all the crumble ingredients until well combined and spread across the dish evenly.

  9. Top apples with the crumble mixture, ensuring apples are evenly covered and press down the mixture.

  10. Bake in the oven for around 30 minutes until golden brown.

Thermomix Method


  1. Preheat oven to 180 degrees Celcius (Fan-forced).

  2. Lightly toast the coconut flakes, slivered almonds and quinoa flakes in a dry pan. May be best to do in batches to avoid burning. Don't brown too much as they will brown in the oven as well.

  3. Blitz Almonds 10 seconds, speed 9. Add walnuts and blitz for another 10 seconds, speed 9. Almonds should look like flour and walnuts like breadcrumb. Scrape down the sides.

  4. Add the toasted ingredients and blitz 5 seconds, speed 6.

  5. Add thermomix content and all other dry ingredients to a bowl and stir to combine.

  6. Stir through the melted coconut so that it evenly coats the crumble. Leave to the side until ready to assemble.

  7. Peel, core and chop up your apple into chunks. Depending on your preference you can either cook the apple from raw or steam it. If steaming, steam for around 7 minutes in the steaming basket with 300 grams of water (don't bother cleaning the bowl) 7 minutes, varoma temperature, speed 2.

  8. Put apples cooked or raw in your baking dish and mix through all the crumble ingredients until well combined and spread across the dish evenly.

  9. Top apples with the crumble mixture, ensuring apples are evenly covered and press down the mixture.

  10. Bake in the oven for around 30 minutes until golden brown.
